Russo’s New York pizzeria has a unique business model that reduces reliance on pre-made and pre-packaged goods. By making our pizzas and dishes fresh in house, Russo’s offers a higher quality product at a fraction of the cost to package, store and ship pre-made and pre-packaged goods from a commissary—saving money for our franchisees. According to RestaurantReport.com the, typical restaurant food costs can run between 28% – 35%.
Russo’s Next Generation Pizzeria franchise model is a more efficient business model, yet still maintains the upscale feel and quality of a full service restaurant. By offering counter service for lunch and full-service for dinner, our model takes advantage of turning tables during a busy lunch period and increased check averages associated with full-service during our dinners. The restaurant can be operated with hourly shift leaders in place of a full-time salaried manager. According to Chron.com the typical restaurant labor cost can range between 25% – 40% of sales.
